*The way to prepare both forms is the same, but you need to filter Tamarind paste more. |

Place Tamarind in cold fresh water for 2-3 hours. |

Move it with its water to a pot and bring to a boil. |

Immediately, get pot away from fire. |

Strain with cheesecloth or through filter paper. |
|
 |
Cover it with new fresh cold water in pot, boil, then filter. |
|
 |
Repeat until the brown color of Tamarind fades away. |
|
 |
Filter then sweeten the juice before it get cold. |
