Sweet and Sour Soup


Enjoy a tasty mixture of sweet pineapple with sour vinegar. To Vietnamese people, pineapple is used as a basic vegetable.

1/4 c. chopped scallions  
1/4 tsp. pepper  
2 tbsp. oil  
1 tsp. sugar  
3 c. chicken broth  
2 tbsp. white vinegar  
2 tbsp. fresh mint leaves  
1 lb. fish fillets  
3 tomatoes  
1 20-oz. can chunk pineapple

Cut the fish fillets into bite-sized pieces. Place fish in a large mixing bowl.
Add pepper to fish. Cover and set aside at room temperature for 30 minutes.
Cut each of the tomatoes into 8 wedges.
Cook tomatoes with sugar in a large saucepan with heated oil over medium heat for 2 minutes, or until tomatoes are soft.
Meanwhile, drain the can chunk pineapple thoroughly.
Add chicken broth, pineapple, and fish to tomatoes. Parboil over high heat.
Lower the heat to medium and cook for 5 minutes.
Chop the fresh mint leaves.
Add vinegar, mint, and scallions.
When fish is cooked and tender, remove from heat.
Place in a serving soup bowl. Serve.
You can serve this soup over hot rice or in individual soup bowls with rice on the side.
