Cut the fish fillets into bite-sized pieces. Place fish in a large mixing bowl. |

Add pepper to fish. Cover and set aside at room temperature for 30 minutes. |

Cut each of the tomatoes into 8 wedges. |

Cook tomatoes with sugar in a large saucepan with heated oil over medium heat for 2 minutes, or until tomatoes are soft. |

Meanwhile, drain the can chunk pineapple thoroughly. |

Add chicken broth, pineapple, and fish to tomatoes. Parboil over high heat. |

Lower the heat to medium and cook for 5 minutes. |

Chop the fresh mint leaves. |

 |
Add vinegar, mint, and scallions. |
|
 |
When fish is cooked and tender, remove from heat. |
|
 |
Place in a serving soup bowl. Serve. |

You can serve this soup over hot rice or in individual soup bowls with rice on the side. |
