Peel and grate sweet potato. |

Heat oven at 350°F. |

Cream butter and sugar with an electric mixer in a large mixing bowl. |

Add nutmeg, honey, lemon zest, and egg to mixture. |

Stir constantly until well blended. |

Fold the grated potato into the butter-sugar mixture. |

In a separate bowl, mix flour, baking powder, baking soda, and salt. |

Add the flour mixture to the potato mixture little by little. |

Stir constantly until well blended. |

Lightly grease a cookie sheet. |

Spread rounded tablespoons of the dough onto the sheet. Allow about 1 inch as a space between each two. |

Place in oven and bake for 7 to 10 minutes. |

When cookies have become lightly browned, remove from oven. |

Allow to cool on a wire rack. |
|

Keep cookies in an airtight bowl for up to 7 days. |
