Sweet Potato Cookies


Sweet potato cakes were created satisfy the passion of British cooks in southern Africa who prefer to have teatime sweets with the African sweet potato.

To make about 40 cookies, you need:  
1 egg  
1 medium sweet potato  
10 tbsp. softened butter  
1 tsp. nutmeg  
1/4c. honey  
2 1/2 c. flour  
1 1/2 tsp. baking powder  
1/2 tsp. baking soda  
1/4 c. sugar  
1 tbsp. lemon zest  
1/2 tsp. salt

Peel and grate sweet potato.
Heat oven at 350°F.
Cream butter and sugar with an electric mixer in a large mixing bowl.
Add nutmeg, honey, lemon zest, and egg to mixture.
Stir constantly until well blended.
Fold the grated potato into the butter-sugar mixture.
In a separate bowl, mix flour, baking powder, baking soda, and salt.
Add the flour mixture to the potato mixture little by little.
Stir constantly until well blended.
Lightly grease a cookie sheet.
Spread rounded tablespoons of the dough onto the sheet. Allow about 1 inch as a space between each two.
Place in oven and bake for 7 to 10 minutes.
When cookies have become lightly browned, remove from oven.
Allow to cool on a wire rack.
Keep cookies in an airtight bowl for up to 7 days.
