Sweet Green Peppers, Fried


Tunisian meal
المقادير
1/2 kg green peppers  
3-5 crushed garlic cloves, olive oil, and salt  
2 tablespoons vinegar

Wash the peppers, remove the seeds and dry it.
Puncture pepper with knife near stem and slip pinch of salt into hole and allow to stand for 30 minutes for allowing the steam to form and preventing oil from entering incesions.
Heat olive oil and fry half the peppers, turning often until slightly browned on all sides.
Place on serving dish, and serve some of the frying oil in separate bowl to be used with the dressing.
Return pan to fire and fry remaining peppers until well browned then add to first hatch, discarding oil.
Mix vinegar, sugar, garlic with the frying olive oil, pour over the peppers and stir until the peppers are well coated.
Chill for 2-3 hours before serving.
