Tasty strawberry torte is a basic sweet dish in midsummer throughout Sweden. Strawberries add an indescribable festive flavor to holidays.

If you use frozen strawberries, thaw, drain, hull, then slice them at the beginning. |

Heat oven at 350°F. |

Line the base of a 9-inch springform pan with waxed paper cut in its size. |

Place butter in a saucepan over slow fire to melt. Set aside to cool. |

Blend cake flour and baking powder. Set aside. |
|
 |
Beat eggs and sugar in a large bowl until foams form. |

Add vanilla extract to eggs. |
|
 |
Stir milk into cooled melted butter. |
|
 |
Mix liquid ingredients with egg mixture. Stir well in dry ingredients until batter is smooth. |

Place in preheated oven and bake for about 25 to 30 minutes. |

Test doneness by inserting a toothpick into the center of the cake. |

When done, remove from oven and allow to cool on a wire rack. |

Remove the waxed paper. Cut cake in horizontal halves. |

Prepare icing by whipping the cream until soft peaks form. |

Divide the whipped cream into two halves; and add sliced berries to one of them. Mix well. |

Unfold strawberry jam over the top of the lower half of the cake. Top with whipped cream and berry mixture. |

Put higher half over the lower one. |

 |
Top the higher cake half with the rest of whipped cream and garnish with strawberries. |

Carefully wrap torte with a plastic cover without spoiling decoration. |

Place in a refrigerator until ready to serve. |

Avoid over-whipping the cream or it will turn to butter. |
