Stewed split Lentils (2)


Lentil is one of the healthiest foods since it contains high levels of protein, and sufficient levels of essential amino acids. It is usually mixed with grains such as rice producing a complete protein dish. There are many ways for preparing a meal including lentil such as Kushari and Stewed lenils and so.
المقادير
2 tablespoons crushed vermicelli  
croutons of local bread, salt  
2 cups lentils  
1 ripe tomato, 2 onions  
1 carrot, 1 large zucchini  
1/2 teaspoon cumin, 2 tablespoons oil  
طريقه التحضير
Parboil lentils with 1 onion, tomato, carrot, and zucchini and cover with two and a half times their measure in water for about 20 minutes.
Pass through juice extractor using a coarse screen.
Return to flame, adding cumin and salt, and when it boils add crushed vermicelli and let simmer for 10 minutes.
Chop remaining onion finely and fry to a rich brown, then toss onions and oil into lentils and cook for 5-7 minutes longer.
Serve with croutons of local bread.
