Stewed Vegetables
Vegetable dishes are served as main dishes in some parts of Spain. This recipe, Pisto manchego, works as both a tangy main and side course.

 |
3 medium-sized tomatoes |

2 or 3 potatoes |
|
 |
1/4 c. cooking oil |
|
 |
1 medium-sized onion, chopped |
|
 |
4 small zucchini, chopped |
|
 |
1/4 c. fresh parsley, finely chopped |
|
 |
1 clove garlic, minced |
|

 |
Place tomatoes in a small saucepan of boiling water for about 1 minute. |

Cool, peel and chop tomatoes. |

 |
Peel potatoes and cut into quarters. |
|
 |
Place a skillet with cooking oil over heat. |
|
 |
Sauté onion in oil until soft and tender. |

 |
Add zucchini, tomatoes, potatoes, parsley, and garlic. |
|
 |
Reduce heat. Cook, covered, for about 30 minutes or until tender. |
|
 |
Serve hot or cold. |
