Stewed Vegetables


Vegetable dishes are served as main dishes in some parts of Spain. This recipe, Pisto manchego, works as both a tangy main and side course.
المقادير
3 medium-sized tomatoes  
2 or 3 potatoes  
1/4 c. cooking oil  
1 medium-sized onion, chopped  
4 small zucchini, chopped  
1/4 c. fresh parsley, finely chopped  
1 clove garlic, minced  
طريقه التحضير
Place tomatoes in a small saucepan of boiling water for about 1 minute.
Cool, peel and chop tomatoes.
Peel potatoes and cut into quarters.
Place a skillet with cooking oil over heat.
Sauté onion in oil until soft and tender.
Add zucchini, tomatoes, potatoes, parsley, and garlic.
Reduce heat. Cook, covered, for about 30 minutes or until tender.
Serve hot or cold.
