Stewed Lamb Shanks


المقادير
6-8 lamb shanks  
5 ripe tomatoes, shelled and diced into coarse pieces  
2 onions, chopped into thin pieces  
5-7 mastic grains  
10 garlic cloves, halved diagonally  
Salt and pepper  
Cooking oil

Blanch shanks and drain.
Brown onions till golden, then remove, add mastic, and stir in oil for 10 seconds.
Add shanks, lid well, and remove from fire for 1-2 minutes to rest and absorb the fragrance of the mastic, then return to flame adding onions, garlic, tomatoes, salt, pepper, and cover with water.
Cook on a very slow fire for 1-2 hours, add more hot seasoned water (if desired), and serve when done.
