Stewed Lamb Shanks

6-8 lamb shanks |

5 ripe tomatoes, shelled and diced into coarse pieces |

2 onions, chopped into thin pieces |

5-7 mastic grains |
|
 |
10 garlic cloves, halved diagonally |

Salt and pepper |

Cooking oil |

Blanch shanks and drain. |

 |
Brown onions till golden, then remove, add mastic, and stir in oil for 10 seconds. |

Add shanks, lid well, and remove from fire for 1-2 minutes to rest and absorb the fragrance of the mastic, then return to flame adding onions, garlic, tomatoes, salt, pepper, and cover with water. |

Cook on a very slow fire for 1-2 hours, add more hot seasoned water (if desired), and serve when done. |
