Stewed Hulled Grain and Chicken


This recipe is know in Syria as Djaj ala Freekia. It is made with hulled grain, green wheat roasted in a special oven, hulled, then ground between two large stones, called rahaya. Before using hulled grain in your food, there are some instructions to follow: 1) Submerge the hulled grain with water in a metal pot then rub till the unneeded items and the impurities float on the surface and the small stones will sink to the bottom 2) Repeat the same precess with changing the water till the water of washing the grain appears clean and then use.
المقادير
5 mastic grains  
1-2 small chickens  
1 tablespoon butter  
salt and pepper  
1 onion  
2 cups hulled grain  
طريقه التحضير
Fry the mastic in melt butter and stir for 10 seconds,
Cut the chicken into neat joints, add to the mastic, then remove from fire and cover immediately to stay warm.
Let for 2 minutes for the chicken to absorb the fragrance, then fry,
Add onion and water to barely cover, Put on medium flame for about Quarter of an hour.
Bone chicken and mash onion, and add enough water to the stock to make 5 cups.
Mix hulled grain with the above mixture and put on fire for about 15 minutes.
Put the boned chicken pieces and cover with gram in the cooking pot
After 10 minutes the meal would be ready to serve.
