Stewed Fish


Jordanian recipe
المقادير
10 crushed garlic cloves,  
2 kg fish  
1 teaspoon cinnamon powder  
3 tablespoons lemon juice  
3-5 coarsely chopped onions,  
2-3 cups rice  
salt and pepper  
1 teaspoon cumin powder

Coat fish with lemon juice and salt and leave for 1 hours.
Brown onions, then add crushed garlic and stir constantly.
Turn off fire, mash well, then add seasoning, spices and plenty of water.
Return to fire and when boiling add fish and cook until tender.
Reserve some of the dark colored broth to submerge the fish with Heat oil.
Fry rice until all grains are well coated with oil.
Add broth to make up 1 1/2 times volume of rice, adjust seasoning and cook until tender.
Serve rice and stewed fish separately.
