Cut meat into small cubes and Parboil it with vegetables, then drain. |

Cut artichoke hearts into 4-6 parts before stewing. |

Peel and slice carrots into thin rounds. |

Heat butter and oil and fry flour until yellow. |

Remove from flame and add the stock in small amounts, stirring constantly. |

Return pot to flame, then add the meat, vegetables, and seasoning and simmer when it bubbles then cook over very slow flame until tender. |

For serving Stewed Artichokes, you can stir in the lemon juice. |
