Stewed Artichokes with Beef

7 artichokes  
1/2 kg beef  
1 tablespoon butter  
1 tablespoon lemon juice  
3 carrots  
1 tablespoon flour  
2 cups stock, salt and pepper  
1 teaspoon oil

Cut meat into small cubes and Parboil it with vegetables, then drain.
Cut artichoke hearts into 4-6 parts before stewing.
Peel and slice carrots into thin rounds.
Heat butter and oil and fry flour until yellow.
Remove from flame and add the stock in small amounts, stirring constantly.
Return pot to flame, then add the meat, vegetables, and seasoning and simmer when it bubbles then cook over very slow flame until tender.
For serving Stewed Artichokes, you can stir in the lemon juice.
