Steamed Fish
The rivers that run through Vietnam are rich with an enormous variety of fresh fish, and seafood is therefore one of the basic dishes on tables.

 |
2 lb. fish fillets, chopped into mouthful pieces |

 |
2 tsp. fish sauce |
|
 |
1/8 tsp. pepper |
|
 |
3 stalks celery, chopped |
|
 |
1 tomato, chopped |
|
 |
1 chopped clove garlic |
|
 |
1 tsp. fresh ginger, finely chopped |
|
 |
1/2 c. fresh mushrooms, sliced |
|
 |
1/4 c. scallions, chopped |
|
|
|
Any firm white fish, such as cod, haddock, or halibut, can be used in this recipe. If using frozen fish fillets, thaw well first. |

Combine all ingredients in a bowl and stir thoroughly. |

Boil 1/2 c. of water in steamer. |
|
 |
Place bowl, covered, into steamer. |
|
 |
Allow to steam over medium heat for 35 to 40 minutes. |
|
 |
When steamed, remove from streamer. Save the liquid juice. |
|
 |
Serve steamed fish hot in a plate with rice. |
|
 |
Pour steaming liquid over fish and rice. |
|
