Soak the cellophane noodles in warm water for 5 minutes. Drain and chop into small pieces. |

Peel and chop the ripe bananas. |

Use a whisk to beat eggs in a bowl. |

Stir in coconut milk, water, and sugar until well blended. |

Transfer mixture from bowl into a 2-quart casserole dish. |

Add noodles, bananas, and salt to the casserole dish. Stir until well blended. |

Before placing dish in a steamer, cover with aluminum foil. |

After 1 hour, test for doneness by inserting a toothpick into custard. |

Serve steamed coconut custard hot or cold. |

If you do not have a steamer, place the casserole dish, covered with aluminum foil, in the center of a large rectangular cake pan filled with water. Place pan in in a preheated 350°F oven and bake for 45 minutes to 1 hour. |
