Steamed Coconut Custard


المقادير
3 tbsp. sugar  
3 eggs  
4 ripe bananas  
1 tsp. salt  
vanilla ice cream  
1 14-oz. can reduced-fat coconut  
milk  
5 tbsp. water  
1 oz. cellophane noodles  
You can substitute vanilla ice cream with frozen yogurt.

Soak the cellophane noodles in warm water for 5 minutes. Drain and chop into small pieces.
Peel and chop the ripe bananas.
Use a whisk to beat eggs in a bowl.
Stir in coconut milk, water, and sugar until well blended.
Transfer mixture from bowl into a 2-quart casserole dish.
Add noodles, bananas, and salt to the casserole dish. Stir until well blended.
Before placing dish in a steamer, cover with aluminum foil.
After 1 hour, test for doneness by inserting a toothpick into custard.
Serve steamed coconut custard hot or cold.
If you do not have a steamer, place the casserole dish, covered with aluminum foil, in the center of a large rectangular cake pan filled with water. Place pan in in a preheated 350°F oven and bake for 45 minutes to 1 hour.
This sweet dish is best served with vanilla ice cream or frozen yogurt.
