Wash the fresh spinach. Remove the stems. Chop coarsely. |

Core the red bell pepper. Remove the seeds then chop. |

Slice the onion thinly. |

Mix peanut butter, vinegar, salt, and red pepper in a bowl. |

Place oil in a kettle over medium heat. |
|

Add onion and red bell pepper and allow to fry for about 5 minutes. Stir now and then. |

Pour vegetable stock and stir. |
|
 |
Bring heat to high to allow to parboil. |

Add peanut butter mixture and spinach. |
|
 |
Simmer for about 5 minutes, stirring now and then. |
|
 |
Remove from flame and serve hot with stiff porridge. |
