Spinach with Peanut Sauce


المقادير
2 lb. fresh spinach  
2 tbsp. apple cider vinegar  
1/2 tsp. salt  
1 red bell pepper  
1 1/2 c. vegetable stock  
1/2 tsp. red pepper flakes  
2 tbsp. canola oil  
1 large onion  
1/2 c. creamy, natural peanut butter  
طريقه التحضير
Wash the fresh spinach. Remove the stems. Chop coarsely.
Core the red bell pepper. Remove the seeds then chop.
Slice the onion thinly.
Mix peanut butter, vinegar, salt, and red pepper in a bowl.
Place oil in a kettle over medium heat.
Add onion and red bell pepper and allow to fry for about 5 minutes. Stir now and then.
Pour vegetable stock and stir.
Bring heat to high to allow to parboil.
Add peanut butter mixture and spinach.
Simmer for about 5 minutes, stirring now and then.
Remove from flame and serve hot with stiff porridge.
