Spicy Fried Fish
In southern India, spices are prepared made from wet spices, a paste of spices with water or other spicy liquids. This recipe comes from this part of India.

2 lbs. fresh white-fish fillets (such as sole or haddock) |

 |
1/2 tsp. ground turmeric |
|
 |
1/2 tsp. black pepper |
|
 |
1/4 tsp. cayenne pepper |
|
 |
1 tsp. salt |
|
 |
2 tsp. lemon juice |
|
 |
1 tsp. fresh ginger, grated |
|
 |
fresh coriander or parsley |
|
 |
lemon wedges |
|
 |
2 cloves garlic, cut into tiny pieces |
|
 |
1/4 c. vegetable oil |
|
|
|
If you use frozen fillets, thaw well before preparing the dish. |

Wash fish with cold water and dry with paper towels. |

Make a mixture of lemon juice, garlic, salt, ginger, turmeric, and black and cayenne peppers in a small bowl. Blend mixture until forms a well mixed paste. |

Roll fillets in bowl to coat totally with mixture. Set aside for 15 to 20 minutes. |

Fry fish fillets in s saucepan with heated vegetable oil over medium-high heat. Flip to fry both sides. |

When bottom side of a fillet is golden brown, remove from pan. |

 |
Place on a serving platter. |

 |
Top with fresh parsley and lemon wedges to decorate and serve. |
