Spicy Fish Stew


This delicious recipe is very famous in the countries that border the Mediterranean Sea.
المقادير
1 to 1 1/2 lb. skinned fish fillets  
4 tbsp. olive oil  
juice of 1 large lemon  
1 chopped large onion  
1/4 tsp. cumin  
6 cloves garlic, cut into tiny pieces  
1/2 tsp. salt  
1/4 tsp. black pepper  
1/4 tsp. cayenne pepper  
10 c. water or fish stock made from bouillon cubes  
1/4 c. cilantro, cut into tiny pieces  
Any firm white fish, such as cod, haddock, or halibut, can be used in this recipe. If using frozen fish fillets, thaw well first.
طريقه التحضير
Place a stockpot with some oil over medium heat.
Add fillets to pot to fry for 5 minutes, flipping to sauté two sides.
Add onions and garlic and fry for 3 to 5 minutes longer.
When onions are tender, lower the heat.
Pour in water or fish stock to the stockpot. Mix well.
Add cayenne, cumin, cilantro, salt, and black pepper. Stir well.
Bring the heat to medium and cook, covered, for about 25 to 30 minutes. When fish is done, it flakes easily. Remove from flame and allow to cool for about 15 to 20 minutes.
Place in a refrigerator to chill for about 40 minutes. Serve fish stew cold.
