Soy Sauce Fish


Indonesia has a huge menu of delicious seafood recipes that are served all through the country.

1 lb. mackerel, cod, or haddock  
fillets  
1 tsp. salt  
2 tbsp. flour  
3 tbsp. peanut oil  
1/2 tsp. shrimp paste  
2 tbsp. water  
1 medium onion, coarsely chopped  
1 large clove garlic, minced  
1 1/2 inch-long piece fresh ginger,  
peeled and finely chopped  
1 red chili, seeded and chopped*  
3 tbsp. lemon juice  
1 tbsp. brown sugar  
2 to 4 tbsp. soy sauce  
4 large lettuce leaves  
You can use any kind of fish—fresh or frozen—to prepare this recipe.

Rinse fish with running cold water and dry with paper towels.
Cut fish fillets into tiny pieces. Set aside.
Combine salt and flour in a bowl.
Roll a fillet in flour mixture to coat. Transfer onto a plate. Repeat with other fillets.
Fry fish for 8 minutes in a saucepan with 2 tbsp. of heated peanut oil
Remove from heat and put on a plate.
Wrap plate with foil to keep warm. Set aside.
Combine shrimp paste and 2 tbsp. water in a small bowl. Mix well.
Heat 1 tbsp. peanut oil in a separate saucepan (or just clean and dry the other one).
Place onion, garlic, ginger, and chili pepper in saucepan to fry in oil, stirring constantly for about 5 minutes.
Add shrimp paste to the onion mixture. Simmer for 2 minutes.
Stir in brown sugar, lemon juice, and soy sauce.
Decorate four serving plates with lettuce leaves. Top with fish.
Pour the sauce over the fish and serve.
