Soup, with Eggs and Lemon (1)

Keep a ladleful of cold soup and parboil the rest. |

Place the egg yolks in a tureen and stir with the cold soup till well blended. |

Just before serving, remove the boiling soup from the fire and gently add it to the cold mixture, stirring continuously untill all the boiling soup has been added to the eggs. |

Add the lemon juice, stir, and serve hot. |

Beat two eggs with whites; add lemon juice and cold soup; stir thoroughly until well-blended, then spill over boiling soup.
Cook on slow fire, stirring to thicken, but do not boil, then serve hot. |
