Shin of Veal, Stewed

1 kg shin of veal |

1/2 kg potatoes |

Cooking oil |

2 onions |

Salt and black pepper |

 |
Dice the onions coarsely and saute in cooking oil. |

Slice meat into small cubes and add to onions and brown. |

Add warm water to cover, salt, and pepper, then cook over very slow fire for about 56-60 minutes. |

Slice shelled potatoes into match-stick size, fry in oil until very crisp, then transfer onto absorbent paper. |

When meat is done, toss in the potatoes and cook for about 9-10 minutes to allow the potatoes to soak up the liquid. |
