Shin of Veal, Stewed


المقادير
1 kg shin of veal  
1/2 kg potatoes  
Cooking oil  
2 onions  
Salt and black pepper  
طريقه التحضير
Dice the onions coarsely and saute in cooking oil.
Slice meat into small cubes and add to onions and brown.
Add warm water to cover, salt, and pepper, then cook over very slow fire for about 56-60 minutes.
Slice shelled potatoes into match-stick size, fry in oil until very crisp, then transfer onto absorbent paper.
When meat is done, toss in the potatoes and cook for about 9-10 minutes to allow the potatoes to soak up the liquid.
