Scones


With their attractive looking, these desserts are of the most festive and favorable ones. They can be prepared in dozens of ways with various ingredients. In some versions of the recipe, households make scones with different types of dried fruit, such as cherries or apricots and other prefer to include Cheddar cheese or chives.

2 c. all-purpose flour  
1 egg  
1/3 c. milk or buttermilk  
1/3 c. currants or raisins (optional)  
1/2 tsp. salt  
1 tbsp. baking powder  
1/2 c. butter  
2 tbsp. sugar  
For lighter scones, use 1/2 skim milk plus 2 tbsp. melted margarine instead of the butter and milk or buttermilk.

Heat oven at 450°F.
Make a mixture of baking powder, flour, and salt in a large bowl.
Add small amount of butter then stir.
Dough should now have the texture of bread crumbs. Add butter to get this texture.
Add sugar and egg to mixture and stir well.
Add milk or buttermilk little by little and stir until stiff.
At this stage, you can add currants or raisins if you wish.
Lightly dust flour on a flat smooth surface (such as a tabletop).
Place dough on tabletop and roll out.
Use cookie cutters to cut dough into circles, 2-inch each.
Lightly grease and flour a cookie sheet. Place circles on sheet.
Place into oven and bake on the middle rack for about 10 minutes.
When scones become light golden brown, remove from oven.
Allow to cool on a wire rack. Serve warm.
If you do not have cookie cutters, cut dough with the rim of a small drinking glass.
Scones are usually served with butter, jam, and whipped cream.
