Chop the small yellow onion. |

Peel and mince clove garlic. |
|
 |
Place a large saucepan over slow fire. Add oil to heat. |

Add onion and garlic to fry for 2 to 3 minutes. |

When onion is soft, add water, chicken broth, salt, and saffron. |
|
 |
Increase heat to medium-high and parboil. |
|
 |
Add rice and stir to combine. |
|
 |
Lower heat to medium- low and cook, covered, for 20 minutes. Stir often. |
|
 |
When done, remove pan from heat. |
|
 |
Set aside for awhile, fluff with a fork then serve. |
