You can substitute margarine for butter; and 2 tbsp. dried grated orange peel for orange grated rind.

Heat oven at 350°F. |

Grind almonds finely |

Butter a medium cookie sheet then dust lightly with flour. |

Beat butter and sugar thoroughly in a large mixing bowl for 5 minutes until well blended. |

Add almonds, vanilla extract, and orange rind. Stir thoroughly until well blended. |

Use a mixer or a whisk to beat egg whites until stiff. |

Little by little, fold flour then egg whites into butter and sugar mixture. Stir thoroughly until well blended. |

Unfold over cookie sheet with a spoon. |
|
 |
Bake for 35 to 40 minutes. Mazurek is done when its color becomes golden brown. |

Remove from oven and allow to cool completely. |
|
 |
Prepare icing by mixing powdered sugar and lemon juice. |
|
 |
Before serving, top mazurek with icing and slice into small squares. |
