Royal Mazurek

To prepare about 40 squares, you need:  
1 1/4 c. sugar  
1 c. almonds  
1 1/2 c. all-purpose flour  
1 c. powdered sugar  
2 tsp. lemon juice  
1 c. butter, softened  
1 tsp. vanilla extract  
grated rind of 1 orange  
5 egg whites  
You can substitute margarine for butter; and 2 tbsp. dried grated orange peel for orange grated rind.

Heat oven at 350°F.
Grind almonds finely
Butter a medium cookie sheet then dust lightly with flour.
Beat butter and sugar thoroughly in a large mixing bowl for 5 minutes until well blended.
Add almonds, vanilla extract, and orange rind. Stir thoroughly until well blended.
Use a mixer or a whisk to beat egg whites until stiff.
Little by little, fold flour then egg whites into butter and sugar mixture. Stir thoroughly until well blended.
Unfold over cookie sheet with a spoon.
Bake for 35 to 40 minutes. Mazurek is done when its color becomes golden brown.
Remove from oven and allow to cool completely.
Prepare icing by mixing powdered sugar and lemon juice.
Before serving, top mazurek with icing and slice into small squares.
