Prepare the vegetables by washing and peeling it |

Divide potatoes and pumpkin quarterly |
|

Cut carrots and parsnips crosswise once, peel onion and leave it whole |

Put the lamb, potatoes and carrots in a roasting pan and roast for 50 minutes |

 |
Add pumpkin, parsnips, and onions and leave for more 25 minutes or till all the vegetables are tender and golden |

 |
Remove from fire, place the lamb in the center and surround it with the roasted vegetables |
|
You can add more kinds of vegetables as you like including peas and french beans and others |
