Roast Stuffed Fish


المقادير
4 to 6 fish fillets, skinned  
2 tsp. butter (or margarine)  
Stuffing:  
1 tbsp. butter or margarine, softened  
2 eggs, separated  
1/2 lb. fresh mushrooms, sliced  
4 or 5 tbsp. bread crumbs  
1/ tsp. salt  
1/4 tsp. pepper  
Sauce:  
1/2 c. half and half  
1/2 c. sour cream  
1/4 tsp. salt

Preheat oven at 350°F.
Combine butter and egg yolks in a mixing bowl. Beat will until texture is creamy.
Whisk egg whites in a separate bowl until foamy. Add to the creamy mixture.
Add bread crumbs, salt, mushrooms, and pepper. Mix thoroughly.
Stuff each fillet with the mixture then roll up.
To prevent the stuffing from falling, hold fillet rolls with toothpicks.
Butter the bottom of glass baking dish.
Gently, place the rolls seam-side-down in the dish.
Top fish with 2 tsp. melted butter.
Place dish on middle oven rack. Bake, uncovered, for 35 to 40 minutes, basting from time to time with drippings from fish or sprinkle fish with water.
Prepare the sauce by combining half and half, salt, and the sour cream. Mix well until soft.
Pour sauce over fish and bake for other 5 minutes.
Transfer fish onto a serving plate and serve hot.
