Rice with Vegetables

2-3 boiled and diced carrots, |

2 thinly sliced sweet green peppers, |

1 thinly sliced onion, |

2 cups rice |

3 ripe peeled and chopped tomatoes, |

 |
cooking oil |
|
 |
salt, mixed spices |
|
 |
3 cups water |

Fry the rice, stirring constantly, until each grain is coated with oil. |

Fry onion until golden and add to tomatoes, sweet peppers, and carrots. |

Add these vegetables, seasoning , to rice and sumerge with water, and stir for the last time. |

Cook over high heat uncovered until the water is absorbed, then cover and lower heat to the minimum for 15-20 minutes. |
