Rice with Gizzards (porridge)


You may find several types of rice in the market, you can determine the best and the worst kind from its volume not of its weight and the main difference between these types is the amount of water absorbed. Before cooking rice, you should rub it in water to get ride of the starch powder that makes it sticky. so you should rinse till you make sure that the water is clean and this should be shortly before cooking it in order not to spoil it. There are numerous ways for preparing rice, and more or less similar in the ingredients and the preparation of the rice itself.
المقادير
1/2 kg boiled gizzards  
5 mastic grains  
2 cups rice  
cooking oil  
salt, mixed spices

Stir mastic grains in preheated oil for 10-15 seconds,
Add the halved gizzards, cover tightly, and turn off the flame and let for 2 minutes for the gizzards to absorb the fragrance
Return the pot to flame to fry, and add 4 cups of water
Fry onions in the oil to a golden brown.
Cut beef into small cubes, and fry with onion on high flame, until the juice is absorbed.
Submerge with water, add seasoning and cook over slow flame for 15-20 minutes.
Add 4-5 cups and stir in the rice.
Cook over slow fire covered for about 30 minutes till it become porridge-like in consistency.
