Wash rice with cold water and strain well directly before cooking it |

Put in a saucepan with salted water and bring to boil |

When water boils, lower heat and leave rice to simmer for 15 minutes. |

Put cinnamon and peeled lime, lower heat and add milk gradually a cup each time |
|
 |
Add vanilla after the first cup and stir well till all the milk is absorbed and the rice becomes creamy lower heat and remove cinnamon stick |

 |
Serve the rice in small bowls and sprinkle a dash of cinnamon |
