Rice Pilaf with Nuts
You may find several types of rice in the market, you can determine the best and the worst kind from its volume not of its weight and the main difference between these types is the amount of water absorbed.
Before cooking rice, you should rub it in water to get ride of the starch powder that makes it sticky. So you should rinse till you make sure that the water is clean and this should be shortly before cooking it in order not to spoil it.
There are numerous ways for preparing rice, and more or less similar in the ingredients and the preparation of the rice itself. This is one of the turkish ways of preparing rice.

1/2 kg chicken livers |

3 cups chicken stock, butter |

2 cups long grain rice |

 |
2 tablespoons pine nuts |
|
 |
3 chopped spring onions, |
|
 |
2 tablespoons currants |
|
 |
2 tablespoons chopped dill, |
|
 |
salt and pepper, dash of allspice |

Fry pine seeds in the oil until golden, remove and set aside, then fry onions with same oil. |

soak chopped livers in salted water for 1 hour, drain,then fry with onion for 5-7 minutes. |

Remove from heat and add allspice. |

Fry rice stirring until all grains are coated with butter, |

Mix chicken stock, currants, dill and seasoning and fry with stirring constantly. |

After leaving covered on fire for 20 minutes, stir in liver and pine nuts, cover again and cook until rice is tender. |
