Ozoni is the traditional Japanese soup dish specially prepared on festive occasions, especially on the New Year celebrations. There are various versions of this hearty recipe which varies from region to region.

Peel and de-vein the shrimp. |

Rinse the leaves of fresh spinach. |
|
 |
Place dried shiitake mushrooms in 1 cup of warm water and a pinch of sugar to soak. |

When soaked, remove from water, but do not discard water. |
|
 |
Cut off mushroom stems and rinse mushrooms under cold water. |

 |
Squeeze mushrooms as dry as you can. |
|

Shred in half, and transfer them into a saucepan. |

Add 1 c. of the water in which you soaked shiitake mushrooms. |
|
 |
Stir in basic clear soup and cook, covered, for 12 to 15 minutes. |

Meanwhile, cook shrimp in boiling water for 2 to 3 minutes. |

Remove from heat, drain, and set aside. |

Bring water to a boil in a small saucepan. Add spinach leaves and simmer for 30 to 40 seconds until leaves are slightly wilt. |

Strain and rinse with cold water, then strain. Set aside. |

Place mochi in in a saucepan with warm water to soak for 5 minutes. Parboil mochi and simmer for 60 minutes, or until soften. |

Strain. Divide mochi and place each in a small bowl. Top each mochi with one shrimp and 3 or 4 spinach leaves. |

 |
Top each bowl with 2 mushroom halves. |
|

Remove the soup from heat. |
|
 |
Pour into the 4 bowls. Garnish with a strip of lemon peel. |

 |
Serve hot at once. |
