Red Beans and Rice


المقادير
1 c. long-grain white rice  
1 c. dried small red kidney beans  
2 chopped yellow onions  
2 minced garlic cloves  
8 c. water  
1/2 small onion  
1 small bell pepper  
1tsp. cumin  
2 peeled and whole garlic cloves  
Salt and pepper to season  
3 tbsp. olive oil  
2 fresh cilantro sprigs  
1 tsp. oregano

Soak beans in cold water for 4 hours and then drain and strain
Seed and chop thinly leaving only one whole strip
Put beans, onion half, chopped pepper, and 2 whole garlic cloves in a sauce pan, cover with cold water and bring to boil for 10 minutes on high heat
Lower heat and let the mixture to simmer covered for 50 minutes after adding seasoning
Remove from fire, drain the ingredients from the sauce, and discard onion, bell pepper, cilantro, and whole garlic
Strain rice and wash with cold water well
Bring the beans liquid to boil and add rice in it and let to cook for 15 minutes on low fire
Sauté chopped bell pepper, minced garlic, remaining cumin, and oregano, and chopped onion in preheated oil for 5 minutes
Add rice to the mixture
Add seasons and cook for more 5 minutes
