Chop the one onion. |

Peel and mince the garlic clove. |

Seed and mince the fresh hot pepper. |

Grate parmesan cheese. |

Chop the fresh parsley. |

Cook onion, garlic, tomato, and hot pepper in a stockpot with heated oil (or butter) over medium heat. Simmer for about 10 to 15minutes. |

When texture thickens, stir in pumpkin and water (or broth). Parboil. |

Lower the heat. |

 |
Stir in sugar, salt, and pepper. Place a lid over stockpot to cover. |

Cook for 20 to 25 minutes until pumpkin becomes very soft and begins to split. |

Whisk any remaining large chunks. |
|
 |
Place in serving bowls and serve hot. |
|
 |
Decorate top with cheese and chopped parsley. |
