Pumpkin Soup


المقادير
3 tbsp. olive oil or butter  
4 c. water or vegetable broth  
1/4 tsp. sugar  
salt and black pepper  
1 fresh hot pepper  
2 lb. Brazilian pumpkin  
Parmesan cheese  
fresh parsley  
1 onion  
1 garlic clove  
1 c. canned diced tomatoes, drained  
طريقه التحضير
Chop the one onion.
Peel and mince the garlic clove.
Seed and mince the fresh hot pepper.
Grate parmesan cheese.
Chop the fresh parsley.
Cook onion, garlic, tomato, and hot pepper in a stockpot with heated oil (or butter) over medium heat. Simmer for about 10 to 15minutes.
When texture thickens, stir in pumpkin and water (or broth). Parboil.
Lower the heat.
Stir in sugar, salt, and pepper. Place a lid over stockpot to cover.
Cook for 20 to 25 minutes until pumpkin becomes very soft and begins to split.
Whisk any remaining large chunks.
Place in serving bowls and serve hot.
Decorate top with cheese and chopped parsley.
