Pumpkin Pudding

To make sure the pumpkin you buy is dry and ripe, choose it very hard and pale in color . |

Peel pumpkin easily by slicing into rounds, then remove (but not discard) the seeds. |

Weigh the pumpkin to determine the amount of sugar needed. |

Cut pumpkin coarsely and cook in its own liquid over very slow fire, tossing at first, then stir it occasionally and very gently to prevent it from sticking to bottom of the pot. |

Keep stirring until the pumpkin is very tender, then raise edge of the pot to strain the possible amount of liquid, and add the sugar. |

Return to very slow fire, and allow all the sugar to dissolve, then cool. |

Stir in some or all of the ingredients left. |

Instead of discarding the seeds of pumpkin, you can roast them with a dash of salt, because they are are very nutritious and rich in calories. |
