Beat the egg slightly. |

Make a mixture of pumpkin, flour, egg, salt, and 1 tbsp. sugar in a large bowl. Blend thoroughly. |

Make sure the batter is thick enough for you to work with. |

In a separate container, mix remaining sugar with cinnamon. Set aside. |

Add 2 inches of oil in a heavy saucepan and heat at 375°F. |

Spoon some little batter one after another into the hot oil in the saucepan. |

Fritters are done when they have become lightly browned. |
|
 |
Remove from saucepan and allow to drain on paper towels. |
|
 |
Sprinkle with the prepared cinnamon-sugar mixture. Serve warm. |
