Pumpkin Fritters


It is quite common to smell fritters being prepared by households all through the streets in different African countries. Cinnamon and sugar turn this pumpkin version into a savory dessert.
المقادير
1 c. canned pumpkin  
1/2 c. flour  
1 egg  
1/2 tsp. salt  
peanut oil  
2 tbsp. sugar  
1/2 tsp. cinnamon

Beat the egg slightly.
Make a mixture of pumpkin, flour, egg, salt, and 1 tbsp. sugar in a large bowl. Blend thoroughly.
Make sure the batter is thick enough for you to work with.
In a separate container, mix remaining sugar with cinnamon. Set aside.
Add 2 inches of oil in a heavy saucepan and heat at 375°F.
Spoon some little batter one after another into the hot oil in the saucepan.
Fritters are done when they have become lightly browned.
Remove from saucepan and allow to drain on paper towels.
Sprinkle with the prepared cinnamon-sugar mixture. Serve warm.
