Potato Soup

4 medium-sized potatoes, peeled and cut into 4 pieces |

2 c. milk |
|
 |
2 tbsp. butter |
|
 |
1/2 tbsp. fresh parsley, chopped |
|
 |
1/8 tsp. pepper |
|
 |
1 onion, peeled and finely chopped |
|
 |
1/2 tsp. salt |

 |
Place potatoes, onion, and salt in a saucepan. |

Cover with enough water. |
|
 |
Bring to a boil. Parboil for about 15 to 20 minutes, or until potatoes are tender. |

Do not drain. Mash potatoes and onion in the pan. |

 |
Add milk little by little, keeping the stir. |
|
 |
Cook soup over medium heat. Stir in butter, parsley, and pepper. |
|
 |
Soup is done when it becomes smooth and hot. Serve. |
