Potato Snowball Cookies

To prepare 1 dozen of these cookies, you need:  
5 large red potatoes  
2 tbsp. flour  
1/2 c. sugar  
2 tbsp. milk  
2 eggs  
1/2 tsp. salt  
1/2 tsp. vanilla extract  
1 c. canola oil  
1 c. powdered sugar

Wash and peel potatoes.
Place potatoes into a bowl with water, then bring to a boil for 20 minutes. Drain. (When potatoes are boiled, you can then easily mash them with a fork).
Pierce them with a fork. Set aside at a room temperature.
Allow to cool totally.
Make a mixture of flour, eggs, salt, vanilla, sugar, and milk in a large mixing container.
Add potatoes to the flour mixture. Mix until well blended.
Shape all mixture into small balls.
Place oil in a large pan over very high heat that if a ball is inserted, it rapidly sizzles to a golden brown.
Cook potatoes for about 7 to 10 minutes.
When done, remove from pan and place onto paper towels.
After cooled, sprinkle balls with powdered sugar. Serve hot.
When cooking potatoes in the pan, use a slotted spoon. It helps lowering potato balls at a time into the hot oil.
