Pot Roast of Rabbit, with Vegetables

1 small rabbit, about 2 kg |

1-2 tablespoons flour |
|
 |
2-3 sliced celery stalks |
|
 |
2 chopped potatoes |
|
 |
2-3 diced carrots |
|
 |
Cooking oil |
|
 |
1 sliced onion |
|
 |
1/2 cup peeled peas |
|
 |
Salt and black pepper |

 |
Slice rabbit into neat joints, put over very slow fire, then discard the juice it loses and repeat again. |

Drain, fry the joints and leave aside. |

Saute the vegetables (the same oil), then add to rabbit joints. |

Brown the flour in the oil in a pot. |

Remove from fire, add salt and pepper, and mix with 2-3 tablespoons water, stirring thoroughly. |

Return rabbit joints and vegetables to pot, season, and place again over flame. |

When sauce bubbles, add warm water to just cover, cook over very slow fire for 66-90 minutes, and add warm water whenever needed. |

You can also prepare this dish with subsitiuting vegetables with lemon juice. Start with dipping rabbit joints into lemon juice then cook the sauce with equal amounts of water and lemon juice. |
