Poached Salmon


المقادير
2 lb. salmon fillets  
1 tbsp. vinegar  
juice of one lemon  
1 qt. water  
2 tbsp. salt  
1 bay leaf  
3 to 4 whole peppercorns  
1 stalk of parsley  
If you use frozen fillets, thaw well before preparing the dish.

Rinse salmon with running cold water and dry with paper towels.
Cut fish into 1-inch-thick slices.
Make a mixture of vinegar, lemon juice, peppercorns, parsley, water, salt, and bay leaf in a large saucepan. Parboil all mixture.
Lower the heat and cook for 10 minutes longer.
Add fish to saucepan and simmer for 10 minutes longer.
When fish flakes easily, remove from heat.
Transfer fish onto a serving plate. Serve warm.
This dish can be served warm or cold, usually with a sauce, melted butter, lemon wedges, chill, boiled potatoes or cucumber.
