If you use frozen fillets, thaw well before preparing the dish. |

Rinse salmon with running cold water and dry with paper towels. |

Cut fish into 1-inch-thick slices. |

Make a mixture of vinegar, lemon juice, peppercorns, parsley, water, salt, and bay leaf in a large saucepan. Parboil all mixture. |

Lower the heat and cook for 10 minutes longer. |

Add fish to saucepan and simmer for 10 minutes longer. |

When fish flakes easily, remove from heat. |

Transfer fish onto a serving plate. Serve warm. |

This dish can be served warm or cold, usually with a sauce, melted butter, lemon wedges, chill, boiled potatoes or cucumber. |
