Poached Fish


المقادير
2 tbsp. margarine or butter  
seasoning  
1 c. milk  
1 1/2 lb. halibut, haddock, or cod  
طريقه التحضير
Heat oven at 375°F.
Grease bottom and sides of a deep baking dish with butter.
Arrange fish in the bottom of the greased dish.
Sprinkle with salt and pepper.
Add milk and wrap dish with foil. Place in preheated oven.
Bake on the middle oven rack for 40 minutes.
When fish is cooked, remove from oven.
Do not discard liquid, but spoon into a saucepan.
Now start preparing the sauce. Reduce oven at 200°F heat. Place fish in oven to keep warm in the meanwhile.
Place the liquid you saved in the saucepan over medium fire.
Combine cornstarch and milk in a separate small bowl until soft and smooth.
Place the cornstarch paste over boiling liquid, keeping the stir.
Sprinkle with parsley and lemon juice.
Pour sauce over poached fish. Serve warm at once.
