Heat oven at 375°F. |

Grease bottom and sides of a deep baking dish with butter. |

Arrange fish in the bottom of the greased dish. |

Sprinkle with salt and pepper. |

Add milk and wrap dish with foil. Place in preheated oven. |

Bake on the middle oven rack for 40 minutes. |

When fish is cooked, remove from oven. |

Do not discard liquid, but spoon into a saucepan. |

Now start preparing the sauce. Reduce oven at 200°F heat. Place fish in oven to keep warm in the meanwhile. |

Place the liquid you saved in the saucepan over medium fire. |

Combine cornstarch and milk in a separate small bowl until soft and smooth. |

Place the cornstarch paste over boiling liquid, keeping the stir. |
|
 |
Sprinkle with parsley and lemon juice. |
|
 |
Pour sauce over poached fish. Serve warm at once. |
