Pineapple-Fish Noodles


In Thailand, pineapple is one of the popular ingredients of everyday meals.
المقادير
2 lb. fish fillets  
fresh mint and cilantro  
3 tbsp. vegetable oil  
1 c. coconut milk  
2 tsp. fish sauce  
1 clove garlic  
1 tsp. fresh ginger  
1 20-oz. can crushed pineapple, drained thoroughly  
1/8 tsp. cayenne pepper  
hot rice noodles  
1/8 tsp. pepper  
1 tsp. sugar  
طريقه التحضير
Cut fish fillets into bite-sized pieces.
Chop clove garlic finely. Grate the fresh ginger.
Place oil in a large skillet over high heat for 1 minute.
Place fish, garlic, and ginger in oil.
Simmer for 3 minutes, keeping the stir.
When fish are white, stir in pineapple, coconut milk, fish sauce, pepper, sugar, and cayenne pepper.
Simmer for 2 minutes longer, keeping the stir.
When fish flakes easily, remove from heat.
Prepare a plate hot rice noodles.
Place fish over noodles and decorate with fresh mint and cilantro.
