Preheat oven to 350°F. |
Place butter, sugar, egg, and molasses in a large mixing bowl using an electric mixer. Mix thoroughly until mixture has become smooth. |
Make a mixture of black pepper, nutmeg, flour, cinnamon, baking soda, cloves, and salt on a piece of waxed paper. |
Dust a flat smooth surface (such as a tabletop) with flour. |
Place dough onto the floured tabletop and knead until the dough is easy to work with and shape. |
Roll a portion of dough and shape long roll about 1 inch in diameter. |
Cut the dough rolls into small slices with a knife. |
Shape a ball from each slice. Repeat with remaining dough. |
Grease a baking sheet. Arrange balls in rows on the sheet. |
Place in oven to bake for 8 to 10 minutes. |
When cookies have become golden brown on bottom, remove from oven. |
Allow to cool. Then serve. |
While kneading dough, it may seem too soft to shape easily. If so, refrigerate dough until firm.
If you wish to store the Peppernut cookies, allow them to cool in an airtight container with a slice of apple to mellow them. |
