Pepper Paste (2)


Tunisian recipe
المقادير
1 red chili pepper, hot  
1 teaspoon black pepper powder  
2 onions, chopped very fine  
1/2 teaspoon tabil  
pinch of turmeric  
1/2 teaspoon cinnamon  
1/2 teaspoon caraway seeds  
3 tablespoon olive oil  
2 tablespoons salt  
طريقه التحضير
put onions, turmeric and salt in tureen and leave them two days untill they become wet and soft.
Squeeze to extract moisture.
Chop chili coarsely after removing stem and seeds.
Soak in boiling water for 30 minutes, then drain and pat dry.
Blend all ingredients and whirl to obtain a smooth thick consistency.
Place in jar, sprinkle top with olive oil, cover, refrigerate, then store.
