Fattoush is one of the most popular dishes in the Lebanese cuisine in which cooks make use of stale pita bread. It is a simple quick recipe that uses broiled pita.

Any vegetable can be used in this recipe as long as it is finely chopped: You can use chard, sorrel, or turnip. |

Chop parsley, mint, tomato, scallions, spinach, and head romaine lettuce. Set aside. |

Peel and chop the cucumber |

Seed and chop the green pepper. |

Put pitas on a cookie sheet and place under the broiler. |

Each side takes about 4 minutes to be toasted and crisp. |

Crush pitas into mouthful pieces and sprinkle with 1 tbsp. water. |

Mix pita with the rest of ingredients in a large bowl. |

Prepare the dressing by pounding the garlic clove thoroughly. Mix garlic with salt in a bowl until a paste forms. Add lemon juice and olive oil. Blend thoroughly until well combined. |

Sprinkle pita with dressing. Toss again until well combined. |

Serve at once. |
