Peasant Salad


Fattoush is one of the most popular dishes in the Lebanese cuisine in which cooks make use of stale pita bread. It is a simple quick recipe that uses broiled pita.
المقادير
Salad:  
1/4 tsp. pepper  
1 tbsp. water  
1/2 c. fresh parsley  
1/4 c. fresh mint  
1 c. fresh spinach  
1/2 head romaine lettuce  
2 pieces stale pita bread  
1 green pepper  
3 scallions  
1 cucumber  
1 tomato  
Dressing:  
1 clove garlic  
1/4 tsp. salt  
6 tbsp. lemon juice  
1/2 c. olive oil  
Any vegetable can be used in this recipe as long as it is finely chopped: You can use chard, sorrel, or turnip.

Chop parsley, mint, tomato, scallions, spinach, and head romaine lettuce. Set aside.
Peel and chop the cucumber
Seed and chop the green pepper.
Put pitas on a cookie sheet and place under the broiler.
Each side takes about 4 minutes to be toasted and crisp.
Crush pitas into mouthful pieces and sprinkle with 1 tbsp. water.
Mix pita with the rest of ingredients in a large bowl.
Prepare the dressing by pounding the garlic clove thoroughly. Mix garlic with salt in a bowl until a paste forms. Add lemon juice and olive oil. Blend thoroughly until well combined.
Sprinkle pita with dressing. Toss again until well combined.
Serve at once.
