Palacsinta


Palacsinta is a delicious sweet Hungarian pancake with walnut filling and chocolate sauce. Hungarian households prepare it as appetizers and as desserts. With their attractive golden texture, they are much like French crepes. Other versions of this sweet recipe are prepared with: a meat mixture, mushrooms or spinach, cottage-cheese mixture, jam or preserves. They are presented folded or rolled.

To make 16 to 18 pancakes, you need to prepare:  
chocolate sauce  
walnut filling  
1 1/2 c. flour  
2 c. milk  
3 eggs  
1 tbsp. oil  
vegetable oil

Use a whisk to beat together milk, eggs, and oil.
Add flour little by little, beating thoroughly after each addition.
With a food processor, blend the batter very thoroughly for 1 minute until you get the consistency of whipping cream. Set aside at room temperature for 60 minutes.
Meanwhile, prepare walnut filling. Then make the chocolate sauce.
Put some oil onto a 7-inch skillet and swirl to cover. Place over medium heat.
With a spoon, stir the batter. Spoon 2 to 3 tbsp. batter into the pan and swirl to coat.
You will notice small bubbles over the batter after awhile.
Fry for about 30 seconds. Slowly flip the pancake when the lower side is done and has become light brown.
Fry for some seconds until second side has become light brown.
Remove from fire and allow to rest in a warm spot.
Cook other batter in the same way until all are done.
Place onto serving plates. Spread about 2 tbsp. walnut mixture on one side of each pancake, and roll up.
Pour hot chocolate sauce on top of pancakes and serve warm.
When adding batter to pan, it is best to use a small ladle.
