Okra Soup


This recipe comes originally from Sierra Leone.
المقادير
1 lb. stewing beef, cut into cubes  
3 tomatoes  
1 large onion  
1 tbsp. vegetable oil  
8 small okra pods  
salt and pepper  
3 1/2 c. beef stock  
2 small eggplants

Grind pepper. Cut the large onion into thinly slices.
Brown beef cubes in a large stockpot with heated oil.
Add the onion, the salt, and the pepper.
Simmer mixture for 10 minutes, stirring often.
Parboil the soup over high heat. Reduce heat and cook.
Place a lid over pot to cover. Simmer for 30 minutes until the beef is almost cooked.
While beef is cooking, wash and clean the okra. Scoop out tops and bottoms of okra pods.
Slice the small eggplants. Peel and seed tomatoes.
Add the eggplant, tomatoes, and okra. Cook for 15 minutes more.
When the vegetables are soft, remove and transfer into a blender. Return the vegetables to the pot, adjust the seasonings, and cook for another 5 minutes.
Place in soup bowls and serve okra soup hot.
