New Year’s Cake


This savory cake is perfect for celebrations and gatherings. With its lovely red color, it creates a delightful atmosphere in parties and birthdays.

To prepare one 8-inch cake, you need:  
5 slabs brown candy  
5 Chinese dried red dates  
cold water  
7 c. glutinous rice flour  
2 c. boiling water  
white sesame seeds  
vegetable oil  
As with a regular steamer, be sure to check the water level regularly and refill as necessary

Put dates in a bowl with cold water until tender.
After 30 minutes, remove from water and split into halves.
Remove inedible seed and pits. Leave aside.
Slice brown candy and allow to dissolve in 2 c. boiling water in a glass bowl. Allow to cool.
Put rice flour in a large bowl and hole it at the center. Fill hole with dissolved brown candy.
Add flour and sugar and mix all until the dough is smooth and shiny and becomes easy to work with.
Knead dough gently with your hands.
Brush a cake pan with vegetable oil.
Place dough in pan and press to shape it with the pan's design.
Garnish cake's surface with sesame seeds and tender dates.
Steam cake over a covered rack of a steamer over high heat for about 35 to 50 minutes. Keep watching the water under the cake and add more if it needs.
Remove pan from steamer and set aside to cool.
Gently remove cake from pan and wrap it in plastic. Place in refrigerator until ready to serve.
Slice cake, then serve.
