Mutton Fritters

To make about 20 fritters, you need to prepare:  
1 c. diced mutton  
1/2 c. flour  
1 medium onion, finely chopped  
1 large egg  
1/2 tsp. baking powder  
1/4 tsp. salt  
2 tbsp. chopped parsley  
2 cloves crushed garlic  
1/2 c. water  
2 tbsp. olive oil  
pepper

Mix sifted flour with baking powder and salt and place into a medium bowl.
Make a well in the middle of the flour mixture.
Lightly beat egg and pour in the well. Blend carefully.
Add water and stir until batter is slightly thin.
Heat 2 tbsp. of olive oil in a small frying pan.
Place batter into pan. When sort, remove.
Make a mixture of onion, mutton, parsley, garlic, and pepper and place into batter.
Heat olive oil in the frying pan over medium heat.
Put balls of batter into oil to fry.
When bottom of batter has browned, turn over to fry other side.
Transfer onto paper towels to drain. Serve warm.
