The wonderful sweet dish of moon cakes is a fabulous story by itself. Tradition tells that secret messages were inserted into these pastries, which helped the Chinese revolutionaries in their attempts to overcome the Mongolian rulers in the 1300s.

You can substitute margarine for butter.
You can get sweet red bean paste from most specialty grocery stores. |

Heat oven at 375ºF. |

In a bowl, make a mixture of flour, baking powder, and salt. |

In another bowl, beat 3 eggs and sugar for about 10 minutes, or until thickens. |

Melt butter. Add butter with water and the flour mixture to eggs and sugar. |

Stir continuously until the mixture's consistency becomes slightly firm. |

Form a long rope about 1-inches thick from the dough. Cut rope evenly into about 20 pieces. |

Use your hands' palms to flatten dough a circle about 3 inches across. Put some bean paste in its center. |

Fold edges of circle toward the center and press gently to seal. Now roll into a ball and flatten carefully and slowly. |

When all dough are made in this way, put a cookie cutter on cake tops and press lightly. |

Transfer onto an ungreased cookie sheet, separating cakes by 1-inch space. |

Brush beaten egg on top. Place in the oven and bake for 25 to 30 minutes. |

Cake is done when it becomes golden in color. |
|
 |
Remove from oven and cool. |

 |
Serve at room temperature. |
