Minestrone


Minestrone is a tasty soup rich with a nutritious combination of vegetables.
المقادير
1/3 c. elbow macaroni, uncooked  
1/2c. beef bouillon  
2 1/2 c. water  
1/4 tsp. pepper  
1 tbsp. olive oil  
1 small onion, chopped  
salt  
1 16-oz. can kidney beans  
1 crushed clove garlic  
1/2 tsp. salt  
1/4 c. fresh parsley  
1 small fresh zucchini, unpeeled  
2 celery stalks with leaves  
2 small carrots  
1 16-oz. can whole tomatoes

Dice the fresh zucchini.
Finely chop the leaves of celery stalks.
Peel and dice the carrots.
Cut up tomatoes with a spoon.
Mash beans together in a large kettle with a fork.
Chop fresh parsley.
Stir in garlic, salt, pepper, oil, and parsley.
Add water and all vegetables to the kettle. Parboil over medium heat. Stir often.
Reduce heat, place a lid over kettle to cover, and cook for about 60 minutes. Stir often.
Add macaroni and beef bouillon.
Cook for 15 minutes more. Stir often.
Add salt to taste. When done, remove from heat and serve in soup bowls.
