Melktert is a lovely sweet dessert makes a celebration quite perfect. It is served at the Malay Feast of the Orange Leaves in Cape Malay culture as a nice treat. In this feast, the name of a new baby is decided 7 days after its birth. The tart is best served with hot tea.

Heat oven at 350°F. |

Blend sugar and butter with an electric mixer. |

Separate egg. Add egg yolk to sugar-butter mixture and beat until light and fluffy. |

Mix flour and salt in another bowl. Add to sugar-butter mixture. |
|
 |
Add milk and blend until well mixed. |
|

Grease and flour a cake pan. |
|
 |
Place dough into the pan and press gently. Set aside to prepare filling. |

Mix egg whites with cream of tartar in an electric mixer for about 5 to 10 minutes, or until softens. Set aside. |

Mix milk and sugar in a saucepan and place over medium heat. |

Put 3/4 c. cake flour in a small bowl. Add about 1 c. of warm milk from the pan. Stir well. |

Cook milk and flour mixture in saucepan, keeping the stir. Add egg yolks and salt and blend. |

Transfer onto medium heat to make the milk mixture boil. Stir from time to time. |

When consistency of mixture thickens, remove from heat and add butter and vanilla. |

Set aside and allow to cool for 5 minutes. |

Add beaten egg whites. Then pour all over the prepared cake. |
|
 |
Garnish with a sprinkle of cinnamon and bake for 25 to 30 minutes. |

Divide tart then serve. |
