Loqmat El Qadi or Judge Mouthful

3 cups best quality flour  
2 cups sugar syrup  
1 tablespoon yeast  
cooking oil  
1 teaspoon sugar  
pinch of salt  
ground cinnamon, or ground sugar

Prepare the sugar syrup, set aside to cool, bring two perforated skimmers place one in the syrup and the other in the frying pan, bring a bowl of water to wet your palm with while forming the dough.
Blend yeast with sugar in tepid water for about 1 hour.
Sieve flour and salt, then make a whole in the center and put the yeast in, and keep covered for about quarter of an hour.
Beat the above mixture thoroughly to form a thin dough with adding some lukewarm water till the dough leaves the sides of the bowl clean.
Keep the dough covered in a warm place for 3 hours till its size doubles.
Fill the wet palm of one hand with soft dough, then close your hand into a fist and squeeze out the dough, then use a wet teaspoon to cut off a small piece of the dough and drop it into the sizzling oil
Repeat the same process till the frying pan with small balls, then fry till they become golden.
Use the first skimmer to remove the fried balls from fire, then saturate with cold sugare syrup.
Remove from the syrup on a shallow serving dish and sprinkle with ground cinnamon or ground sugare before serving.
